Oyster Mushroom: Nutrition, Ergothioneine and Health Research

The oyster mushroom (Pleurotus ostreatus) is a low-calorie, high-fiber food that supplies meaningful protein, potassium, B vitamins, and one of the highest levels of the antioxidant ergothioneine found in any common culinary mushroom. A small number of human clinical trials suggest that regularly eating oyster mushrooms may modestly improve blood glucose and cholesterol markers, though the research base is still described by reviewers as limited in size and quality. It is a food, not a treatment, and none of the research below should be read as a reason to change medicine or a treatment plan without a clinician’s guidance.

A note before you read further: Oyster mushrooms naturally contain small amounts of lovastatin, the same compound found in prescription statin medicines, and animal and early human studies link them to lower cholesterol and blood sugar. Nutrition profile: what’s in a serving of raw oyster mushroom

The figures below come from U.S. Department of Agriculture food composition data for raw oyster mushrooms and are calculated per 100 grams (roughly 3.5 ounces, about one cup sliced). Exact values vary somewhat by growing conditions and testing method, so treat these as representative rather than exact for any single mushroom.

Oyster mushrooms are also a source of B vitamins, including niacin and riboflavin, and provide small amounts of copper. Like most mushrooms grown out of direct sunlight, they contain little vitamin D unless the grower exposes them to ultraviolet light during cultivation, a practice USDA data separately tracks for UV-treated mushroom products.

Ergothioneine: the compound that sets mushrooms apart

Ergothioneine is a naturally occurring antioxidant amino acid that the human body cannot make on its own. Mushrooms are, by a wide margin, the richest dietary source of it. A 2023 food-composition study that measured ergothioneine across seven common culinary mushroom varieties found that lion’s mane and oyster mushrooms contained the highest concentrations of any of the varieties tested, ahead of white button, crimini, portabella, maitake, and shiitake.

Researchers have proposed that ergothioneine may act as a protective antioxidant in the body, though the physiological role in humans is still being worked out, and a compound being abundant in a food is not the same as proof that eating that food changes disease risk. Ergothioneine is heat-stable, meaning normal cooking does not significantly destroy it.

Human research on cardiovascular and metabolic health

This is the section where it matters most to separate what has actually been tested in people from what has only been shown in animals or cells, so the evidence is organized that way below.

What controlled human studies have found

A 2020 systematic review of clinical trials examined the effect of P. ostreatus intake on cardiometabolic outcomes in humans. Across eight trials, researchers observed reductions in fasting and/or post-meal blood glucose in some studies, along with decreases in total cholesterol, LDL (“bad”) cholesterol, and triglycerides in others; a few studies also found reductions in blood pressure. Body weight did not change in the studies that measured it. Importantly, the review’s authors rated the overall risk of bias in most of the underlying trials as high or unclear, due to small sample sizes and methodological weaknesses, and concluded that the evidence for cardiometabolic benefit is currently low-certainty, warranting larger, better-designed trials.

An earlier human trial illustrates this same pattern. In a 21-day randomized study, 20 adults who ate a soup containing 30 grams of dried oyster mushroom daily were compared with a group who ate a tomato soup placebo; the mushroom group showed reductions in blood cholesterol measures compared with placebo. In a separate, smaller open-label study in adults with HIV on antiretroviral therapy who had elevated cholesterol, eight weeks of daily freeze-dried oyster mushroom did not produce a statistically significant reduction in non-HDL cholesterol, though HDL (“good”) cholesterol rose modestly. Findings across human studies are therefore mixed in size of effect, and results from young, healthy volunteers may not extend to people with other health conditions.

What has only been shown in animals or cell studies

Much of the mechanistic story behind these human findings comes from animal research, which should not be read as proven in people. Rat studies feeding cholesterol-supplemented diets with dried oyster mushroom have reported reduced serum and liver cholesterol alongside increased cholesterol excretion, and separate diabetic-rat studies have reported lower blood glucose and improved lipid profiles after oyster mushroom powder. One proposed mechanism is the mushroom’s natural content of lovastatin, a compound structurally identical to a class of prescription cholesterol drugs, along with beta-glucan fibers that may bind cholesterol in the digestive tract. These are plausible explanations for the human findings above, but animal-dose effects do not automatically translate to the amounts a person eats in food.

How the evidence stacks up

Culinary food or therapeutic supplement?

Nearly all of the positive human findings above come from studies where people ate whole or dried oyster mushroom as food, in amounts (roughly 10 to 30 grams dried per day) that are achievable through cooking, not from concentrated extract supplements. There is currently no established, well-studied “therapeutic dose” of oyster mushroom for any condition, and higher-dose concentrated extracts have not been tested for safety or effectiveness to the same degree as food-level intake. Anyone considering a mushroom extract supplement, rather than culinary use, should discuss it with a clinician first, especially given the potential for interaction with cholesterol and blood sugar medications discussed below.

Safety, interactions, and who should be extra cautious

  • Statin and cholesterol medications: because oyster mushrooms naturally contain lovastatin, combining regular high intake or extracts with a prescription statin could theoretically add to the cholesterol-lowering or muscle-related side effects of the drug. Ask your doctor or pharmacist before combining the two.
  • Diabetes medications: given the blood-glucose-lowering signal in some trials, people on insulin or glucose-lowering medications should monitor for low blood sugar if substantially increasing intake, and should discuss any dietary change with their care team.
  • Immune-modulating conditions or medications: mushroom beta-glucans can stimulate immune cell activity in laboratory studies. People taking immunosuppressant medications, or living with an autoimmune condition, should ask a clinician before using concentrated mushroom products.
  • Pregnancy and breastfeeding: cooked culinary amounts of oyster mushroom are a standard food in many cuisines, but concentrated extracts have not been well studied in pregnancy and should be discussed with a prenatal care provider.
  • Allergies and mold sensitivity: mushrooms can trigger allergic reactions in sensitive individuals, and people with mold allergies may be more likely to react.
  • Preparation: oyster mushrooms are a cultivated culinary species and are conventionally cooked rather than eaten raw; proper cooking also improves digestibility.
